Dump-and-Bake Smothered Chicken with Bacon

Ingredients 6 small boneless skinless chicken breasts (or 2 large breasts thinly sliced, about 24 ounces total) 1 tablespoon Ranch salad dressing and seasoning mix (just the dry seasoning) 1 (15 ounce) jar (about 1 ¾ cups) Alfredo pasta sauce 4 slices cooked, chopped bacon* 3 slices provolone cheese Optional: fresh parsley or chives for garnish Instructions Preheat the oven the 375F (190C). Spray a 2-quart baking dish with cooking spray. Place chicken in prepared dish and sprinkle both sides of the meat with Ranch seasoning mix. Pour Alfredo sauce over top of the meat, toss to coat, and cover tightly with foil. Bake for 30-35 minutes, or until chicken is cooked through. Remove chicken from the oven; top with cheese slices, breaking the cheese to fit on each piece of meat. Ingredients 8-10 pieces chicken thighs with skin 3 cups all-purpose flour 1 tbsp paprika 3 tsp table salt 2 tsp pepper Instructions Preheat oven to 425 degrees. Spray a 9x13 metal, stoneware or enameled cast iron baking dish with cooking spray & set aside. Combine chicken, flour, paprika, salt and pepper in a large gallon-size zip-top bag- seal & shake well until chicken is coated in flour. Remove each piece of chicken from the bag & place skin down in the prepared baking dish. Sprinkle with additional seasonings to taste if desired. Bake 30-35 minutes. Cheddar Bay Chicken Bake

Ingredients  1 box Red Lobster Cheddar Bay Biscuit mix 3/4 c. cold water 1/2 c. shredded cheddar 1/2 c. green onions chopped 1 lb. boneless chicken breasts 12 oz. marinara 1/2 c. butter melted Instructions Saute the chicken breasts for 8 minutes, or until no longer pink in the center. Meanwhile, combine the biscuit mix with water, cheddar and green onion. Set aside. In a sprayed 9x13 pan, layer the marinara, chicken breasts and prepared biscuit mix. Spoon the biscuit mix over the chicken breasts to cover completely. Bake at 400° for 25 minutes.  Combine the melted butter and seasoning packet from the biscuit mixture and brush over the top of the casserole. Allow to cool for 5-10 minutes and serve. Bacon-Wrapped Cheese-Stuffed Chicken

Ingredients  4 ounces cream cheese, softened 1/2 cup cheddar cheese, shredded 4 (4 ounces each) boneless, skinless chicken breasts 8 slices thin cut bacon paprika to taste 1 tablespoon fresh parsley, chopped Instructions In a bowl, combine cream cheese and cheddar cheese. Form into about 2 to 3-inch length and 1/2-inch thickness (make sure they will fit the cut you make on the chicken). Wrap each cheese log in plastic film and freeze for about 10 to 15 minutes or until firm. Trim chicken of any excess fat. Make a small slit on top of meat, but not cutting all the way through.   Remove the plastic film and insert the cheese log into the slit. Wrap chicken with bacon and place in a single layer on a cast iron skillet or baking dish. Season with paprika to taste and sprinkle with chopped parsley.  Bake in a 400 F oven for about 30 to 35 minutes or until thermometer inserted in center of chicken reads 165 F. Ingredients 6 (1.5 pounds, total) boneless, skinless chicken breasts 1 teaspoon garlic powder 1 teaspoon dried basil 1 teaspoon dried thyme 1/2 teaspoon sweet paprika salt and fresh ground pepper, to taste 1 tablespoon olive oil 8 ounces mushrooms, sliced 3 cloves garlic, minced 1 cup dry marsala wine 1/2 cup water 1/4 cup cornstarch 1/4 cup heavy cream chopped fresh parsley, for garnish  Instructions Lightly grease a 6-quart slow cooker with cooking spray and set aside. Frozen Chicken Breast in Air Fryer

Ingredients 2 large chicken breasts frozen, boneless skinless is what was used 1/2 tsp salt 1/4 tsp pepper 1/4 tsp garlic powder 1/4 tsp parsley flakes Instructions Put frozen chicken breasts in your air fryer basket. Sprinkle ingredients on top evenly between the two of them. Close and cook at 360 degrees for 15 minutes. White Chicken Enchiladas Recipe

Ingredients White Chicken Enchiladas: 10 8-inch flour tortillas 2 cups cooked shredded chicken 2 cups Colby & Monterey jack cheese shredded 3 tbsp butter 3 tbsp flour 2 cups chicken broth 1 cup sour cream 1 4oz can of diced green chilies Instructions How to make White Chicken Enchiladas: Preheat oven to 350 degrees. Grease a 9x13 pan or any baking dish. Mix the chicken and 1 cup of cheese. Roll up tortillas and place into the prepared pan. In a saucepan, melt butter; stir in flour and cook for 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. Stir in sour cream and chilies. Do not bring to boil. You don't want curdled sour cream. Ingredients 2.5 lb chicken drumsticks 2 Tbsp olive oil 3/4 tsp salt 1 tsp garlic powder 1/4 tsp black pepper 3/4 c. butter melted 8 cloves garlic minced 2 Tbsp fresh parsley minced 1/2 c. parmesan cheese shredded Instructions Preheat grill to 350-400 degrees F. Brush chicken legs with olive oil. In a small bowl combine salt, garlic powder and black pepper. Rub into chicken legs. Place chicken legs on grill for 30 minutes rotating every 10 minutes, or until they reach an internal temperature of 185-190 degrees F. Ingredients 3/4 cup lukewarm water 1 (.25-ounce) (or 7 g) packet active dry yeast 1/2 cup evaporated milk 1/3 cup sugar Pinch of salt 1 large egg 1 teaspoon vanilla extract 3 3/4 – 4 cups all-purpose flour 3 tablespoons melted butter corn oil or any flavorless oil , for frying powdered sugar , for dusting Instructions In a large bowl or stand mixer, combine lukewarm water and yeast. Let it sit until dissolve for about 5 minutes.  Lightly whisk evaporated milk, sugar, salt, egg and vanilla extract. Add it to the yeast mixture.  Mix in about 2 cups flour and continue mixing with hand or dough mixer. Ingredients Crust and Topping 1 1/2 cups all purpose flour 1/2 cup sugar pinch salt 3/4 cup cold butter cut into cubes For the filling 2 eggs 1 cup sugar 1/3 cup all purpose flour 1/2 cup sour cream pinch salt 3 cups fresh blueberries - Frozen can be substituted Instructions Spray a 9x13 glass baking dish with non stick spray - set aside. Preheat oven to 350 degrees. Add flour, sugar, salt and cubed butter to mixing bowl, beat until combined and crumbly. (DO NOT OVER MIX or you will have a cookie dough consistency. It should be crumbly)  Remove one cup of flour mixture and set aside. Take remaining mixture and firmly press into your baking dish, covering the bottom. Sugar-Free Keto Chocolate Chip Cookies

Ingredients 1.5 cup almond flour 1/2 cup salted butter melted 3/4 cup monkfruit sweetener 1 tsp vanilla extract 1 egg 1/2 tsp baking powder 1/2 tsp xanthan gum 3/4 cup sugar-free chocolate chips (we use Lily's brand) Instructions Preheat the oven to 350 F. Prepare a baking tray with lined parchment paper. In a large mixing bowl, pour melted butter, monkfruit sweetener, vanilla extra and an egg. Beat thoroughly with a hand mixer for about 20 seconds. Then add in the almond flour, baking powder, xanthan gum and a pinch of salt. Mix until well incorporated and texture turns doughy. Pour in the sugar-free chocolate chips and fold in nicely with a spatula. Use your hand to form cookie dough into 2-3 inch sized balls. You should be able to make about 9-12 balls with the entire cookie dough. Place on the baking tray a few inches apart from each other. Bake for 10 minutes. Then set aside and allow to it cool. Ingredients 1 cup all-purpose flour 3/4 cup sugar (granulated sugar) 2 Tablespoons baking cocoa (unsweetened) 2 teaspoons baking powder 1/4 teaspoon salt  1/2 cup whole milk 2 Tablespoons vegetable oil 1 teaspoon pure vanilla extract 1 cup chopped nuts (pecans or walnuts), optional  1 cup light brown sugar (packed) 1/4 cup baking cocoa (unsweetened) 1 3/4 cups very hot water  Ice Cream   Directions   Preheat oven to 350 degrees F.  In an ungreased 9×9 square baking dish, using a fork, mix first set of dry ingredients – flour, sugar, cocoa, baking powder and salt – mix well.  Next, stir in milk, vegetable oil and vanilla, mix until smooth. If using nuts, add them now. Spread batter evenly in pan.  Last, sprinkle batter evenly on top with brown sugar and remaining 1/4 cup baking cocoa. Chocolate Peanut Butter Heaven

Ingredients 3 3.5 oz pkgs instant chocolate pudding, dark or milk chocolate 4 c milk 5 1/2 c cornflakes, slightly crushed 1 1/2 c peanut butter 2 8 oz pkgs pkgs cream cheese, softened 3/4 c powdered sugar 3 c cool whip mini chocolate chips, optional, for serving Instructions   Combine the milk and pudding mix with an electric mixer. Once smooth, put in the refrigerator to set for at least 1 hr or overnight. For the bottom layer, mix the cornflakes and peanut butter until combined (the best way to do this is with your hands; it’s messy, but effective). Spread the cornflake/pb mixture into the bottom of a 13×9 baking dish until evenly coated. Place into the freezer for 30 minutes to allow it to harden. Ingredients 14.3 oz package Lemon Oreos - or Golden Oreos about 36 cookies 6 tbsp unsalted butter melted 8 oz PHILADELPHIA Cream Cheese softened 1/2 cup margarine or butter 1 cup powdered sugar 16 oz cool whip or you can make your own cream 7.8 oz lemon instant pudding 3 cups milk lemons for garnish Instructions Begin by crushing your Oreos. For a very fine mixture, place Oreos in a food processor. Place in a ziploc baggie and add melted butter. Mix until it is well combined.  Press into the bottom of a 9x13 pan, spreading out to cover the entire bottom of the pan.  In a medium bowl, blend cream cheese, margarine/butter, powdered sugar, and ½ of the cool whip. Blend well and pour over your Lemon Oreo Crust.  In another bowl, make the pudding by adding your milk and instant pudding to your bowl. Whisk together until pudding thickens. Ingredients To Cook Chicken And Make Broth: 1 whole chicken , thawed and cleaned (remove and discard giblets from cavity) 1/2 cup carrots , celery, and onion (OPTIONAL-to flavor the chicken broth) Water to completely cover chicken in a large stockpot. To Make The Dumplings: 1 cup all purpose flour 1 teaspoon salt 2 heaping Tablespoons vegetable shortening 1/2 cup HOT water 1/2 cup plus 2 Tablespoons all purpose flour To finish soup: Two large chicken bouillon cubes 1 Tablespoon butter 1/4 cup water mixed with 2 Tablespoons flour Salt and Pepper , to taste (approx. 1 teaspoon salt, 1/2 teaspoon pepper) Instructions Put the chicken and the veggies (if using) in a large stockpot. Cover completely with water. Bring to a quick boil, then continue cooking chicken for one hour. When done, remove chicken to large bowl to cool. Baked Maple Chicken Thighs (Boneless and Skinless)

Ingredients 12 chicken thighs (skinless and boneless)  2 Tbsp olive oil 1 tsp sesame oil 2 tsp kosher salt (or to taste) 1/2 tsp black pepper 2 Tbsp maple syrup 2 Tbsp apple cider vinegar 3 garlic cloves (pressed) 2 Tbsp fresh parsley (finely chopped) Instructions Preheat oven to 425F. Add the chicken thighs to a large bowl. Add the salt, pepper, oils, maple syrup, apple cider vinegar, pressed garlic and one tablespoon of chopped parsley. Mix well and let sit at room temperature for 30 minutes. Mix once again and transfer the chicken thighs to a 9" x 13" baking dish. Bake for 20 minutes or until the the thighs reach about 150F - 155F internal temperature. Move the baking dish to the top rack and turn on the broiler to high. Broil for a few minutes, constantly watching, until slightly browned.  Remove the thighs from the oven, baste with pan juices and let rest for about 5 minutes. Slow Cooker Chicken and Rice Casserole

Ingredients 1 1/2 pounds chicken breast (boneless and skinless) 21 oz cream of chicken soup (I used two cans at 10.5 oz each) 1 cup chicken broth 1/2 teaspoon onion powder 1/8 teaspoon garlic powder Salt and pepper (to taste) 2 cups instant rice 1 1/2 cups cheddar cheese (shredded) Instructions Add chicken breast to your slow cooker. In a separate bowl whisk together cream of chicken soup with broth and all seasonings. Pour over chicken breast in the slow cooker. Cover and cook on low for 6-7 hours or on high for 4-5 hours.  Once the chicken is cooked through remove from slow cooker. Shred then return to the slow cooker. Cook rice according to package directions. Mix rice into cooked and shredded chicken.
